‘If you like Pina Coladas, getting caught in the rain..’
Yes you read right, this is the recipe for my mouth-watering, creamy Pina Colada smoothie! When I was younger I would always order a Pina Colada when going out with friends (or five, oops) and can say with confidence that I have grown to be an expert in the matter. Hell, one time when I was in Athens in Greece I asked for a Pina Colada and got a mixture of orange juice, vodka and some other spirit. Orange juice! The bartender clearly had no idea how to do his job properly, so I practically ended up doing it for him. No joke, I full on went behind the bar and all.
But anyway, this cocktail isn’t the healthiest beverage even though it definitely makes up for it in deliciousness. So here I bring to you the healthy, alcohol free and of course vegan version!
2 cups of frozen bananas (cut them in chunks before freezing to make your life a lot easier if you don’t own a Vitamix)
2 cups of fresh pineapple
200 ml of coconut milk
1 tsp of coconut extract
If you feel extra fancy you can add some coconut cream as well, its going to be even creamier!
Then blend everything together, top with coconut flakes and serve in an Instagram worthy mason jar 🙂
